Midnight Snack Video: Thai Beef Noodles & Braised Goat at Wattana Panich in Bangkok

From Mark Wiens of Migrationology—a visit to Wattana Panich (วัฒนาพานิช-ก๋วยเตี๋ยวเนื้อ)—one of the most famous restaurants for Thai beef noodles in Bangkok. The beef noodles (kuay teow neau buai sen lekswim in a beautiful broth, covered by amazingly tender cubes of beef, and garnished with cilantro. Next up, goat noodles (kuay teow pae sen lek) topped by huge, tender chunks of goat in a thick, meaty broth. Amazing!

  1. How DO they manage the tender meat? Every time I do something similar the pieces end up dry!
