  1. This is a really useful video, as technical stuff like this can be quite difficult to learn from a book. I’d love to see more butchery videos e.g. poultry, game.

    Is the procedure the same for all common fish? or are there great varieties in the skeletal structures, meaning the procedure varies quite a lot?

    • The techniques and procedures will be largely the same for other fish but there will be some variation. We have a video of breaking down a dory, and another of breaking down a chicken coming fairly soon, so stay tuned!
